Recipe 9: Besan and Suji Halwa

In the colder months the body craves for something warm, yummy and nutritious.


This halwa recipe is very different from the traditional suji halwa and incorporates gur or jaggery which is abundant in the winter season and has several health benefits.


An inexpensive sweetener like jaggery aids fighting common cold and cough by building immunity. It is rich in iron and therefore helpful in preventing anemia. Adding jaggery to sweeten desserts is a good and a healthy option.
Lets begin with making this halwa!

Ingredients:

  1. 3 cups water
  2. 1 cup suji or semolina
  3. 1 cup besan or chickpea flour
  4. 1 cup gur or jaggery
  5. 1 cup ghee
  6. 2 tbsp. sugar
  7. 3 elaichi or cardamom

Method:

In a wok or kadhai dry roast suji and besan together till it releases an aroma.
Add ghee and fry the mixture for 5 minutes.
Meanwhile, crush and make a powder of the cardamom seeds.
After the suji and besan mixture turn light brown, add in the sugar and jaggery.
Mix till jaggery melts.
Add water to turn the dry mixture into a thick slurry.
As the halwa cooks, it will thicken.
Fold in the cardamom powder to finish.
Serve warm.
