I normally prepare sweets at home during puja or festival. Today is Maha Shivratri and suddenly it occurred to me to bake a vegan cake instead. Almost all the ingredients that would go in making a sweet also goes in this cake. It is a mindset which doesn't really think that a cake can be a Prasad.
But we can.
Below is a simple recipe of coconut cake.
The combination of coconut and white chocolate is unique and they go excellent together.
Add semolina and coconut to the wet ingredients.
Add the dry flour mixture and chocolate chunks.
Transfer the batter to a greased and floured round cake tin and sprinkle few white chocolates on top.
Bake for 1 hour in a 180 degree oven or till the toothpick inserted comes out clean.

- 1 cup semolina

- 1 cup castor sugar
- 3/4 cup vegetable oil or 1 cup softened unsalted butter
- 1/2 cup chopped white chocolate (click to buy White Chocolate Slab)
- 1 tbsp. baking powder
- 2 tsp. vanilla essence (click to buy Vanilla Madagascar)
- 1 tsp. salt
Method:
Sieve together flour, baking powder and salt.
Keep aside.

Ha maine aaj ye cake khaya tha. Really very good taste n texture. No doubt egg less is better cake...
