Recipe 12: Eggless White Chocolate and Coconut Cake

I normally prepare sweets at home during puja or festival. Today is Maha Shivratri and suddenly it occurred to me to bake a vegan cake instead. Almost all the ingredients that would go in making a sweet also goes in this cake. It is a mindset which doesn't really think that a cake can be a Prasad.


But we can.


Below is a simple recipe of coconut cake.










Ingredients:

  1. 1 cup flour
  2. 1 cup semolina
  3. 1 cup dry shredded coconut (click to buy Urban Platter Dried Coconut Flakes)
  4. 1 cup milk
  5. 1 cup sugar powder
  6. 3/4 cup vegetable oil
  7. 1 tbsp. baking powder
  8. 1 tsp. salt
  9. 1 tbsp. vanilla essence (click to buy Ossoro Vanilla Madagascar)
  10. 1/2 cup of white chocolate chips (CCDS White Chocolate Chips)

Method:

Sieve and keep aside flour, baking powder and salt.
In a large mixing bowl, whisk oil, sugar, milk and vanilla essence.
Add semolina and coconut. I used a thicker variant of flaky coconut by Urban Platter and not the fine powder one.
Add the dry mixture and chocolate chips.
Transfer the batter to a greased and floured round cake tin (Okayji Teflon Non Stick Cake Tin Set of 3 is a good option) and sprinkle few white chocolate chips on top. The combination of coconut and white chocolate is unique and they go excellent together.
Bake for 1 hour in a 180 degree oven or till the toothpick inserted comes out clean.
