Recipe 1: Pound Cake

Pound cake is a dense yet a soft cake as compared to the regular cakes.

My version has a slight tang or sourness from the curd/yogurt which counteracts beautifully with the sweet vanilla flavour.
This recipe of pound cake is superb. It is a perfect cake to accompany a cup of tea or coffee.

  1. 1 + 1/4 cups all purpose flour
  2. 1/2 cup sugar powder
  3. 1/2 cup flavourless vegetable oil
  4. 1/4 cup sour yogurt
  5. 1/4 cup milk
  6. 2 tsp. Vanilla essence (click to buy Ossoro French Vanilla Essence)
  7. 1 tsp. Baking powder
  8. 1/4 tsp. Baking powder
  9. 1/4 tsp. Salt
  10. 2 eggs
  11. A handful of crushed almonds (optional)


In a bowl, whisk oil, yogurt, sugar, eggs and vanilla essence together.
In a separate bowl, sieve flour and baking powder to make it clump free.
Combine the wet ingredients with the dry flour mixture.
Lightly fold the cake batter.
Pour it in a greased and floured cake tin.
(Optional step) Sometimes I add a few slivered almonds to the wet batter on top just before baking for a crunchy topping.
Bake your cake in a pre-heated oven at 180 degrees for 40 minutes or till a toothpick inserted comes out clean.
