Last night I was in such a hurry to prepare my baby's food as well as dinner for me and my husband.
Rice based preparations are a staple in our dinner table. Wanting to create something with the available ingredients in the fridge and ensuring that it is nutritious, I made a pulao or fried rice with extremely less and simple ingredients.
And Man! Did it turn out good. Yes it did! Without any whole or powder spices, for the first time we could taste the vegetables.

Ingredients:
- 2 cups of rice
- 1 carrot thinly sliced
- 1 medium onion thinly sliced
- 7-8 French beans chopped
- 1 cup soya nuggets soaked in water for10 minutes
- salt to taste
- 2 tbsp. vegetable oil
Method:
Wash the rice well and keep it soaked till its time for cooking. Prolonged soaking of rice in water helps to extract starch from rice.
Soak the nuggets in hot water.
In a kadhai, add vegetable oil and fry the onions.
After they attain some brown color, add in the carrots and beans.
When the vegetables cook 50 percent, add and fry the nuggets (drain from water).
Add the rice after draining all the starchy water.
Add salt.

Cover and cook the pulao in 4 cups of water.
Tip:
- In addition to vegetable oil, pure ghee or butter can also be added for extra flavour.
- Carrot and beans can be replaced with vegetables like cauliflower, green peas, potatoes and capsicum.
