Recipe 26: Egg Paratha

Grandmothers exuberate love, comfort and delicious food.

My husband's grandmom is here with us for a few days and she cooked these lovelies for us yesterday.

These are indulgence and no where near healthy food. But they are pure yummy and comfort food.

Try one day as a breakfast, snack or party dish and make both adults and kids gorge on it.

Ingredients for 6 Parathas:

  1. 2 cups all purpose flour
  2. 1/4 cup vegetable oil
  3. 3 large eggs
  4. 2 onions finely chopped
  5. 2-3 green chillies finely chopped
  6. salt to taste
  7. more vegetable oil for frying

Method:

Prepare the dough by mixing well the flour with 1/4 cup of oil and little salt to taste.
When the flour begins to resemble the texture of wet sand, add water and knead the dough.
Ensure that the dough is not tough and is very soft.
Smear oil all over the dough and rest it for atleast 1 hour.
For the filling, crack eggs in a bowl and add the onions, green chillies and salt to it.
Now begin by rolling out small roundels of the dough. The rolled out dough must be very thin.
On a hot tawa or frying pan, heat some oil.
Spread the prepared paratha and immediately add a ladle full of egg mixture.
Now begin folding sides and form an envelope.
You may keep an opening in the middle for the egg to cook or completely close and make a parcel.
Either way, cook the paratha on low flame and drizzle oil for frying both sides.
Transfer to a serving dish and eat warm with tomato ketchup or just as it is with some Masala Tea.
