Recipe 69: Golden Vanilla Custard Cake

There are times when you are wishing for a cake but have no cake flour at hand. But should that stop you?

I guess not!

Today, I am sharing a rather experimental baking that actually turned out very good.
Made with custard powder, this cake is golden in color, very vanilly flavour and super soft from the hot milk trick I played on it.
Hot Milk Cakes are a thing. I googled it several years back and made one. Hot milk when added to the cake batter tenderizes the flour and immediately heats up the batter. Resulting in activating the baking powder/soda for a good risen and soft cake crumbs.

Today I re-created it by more additions like custard powder.

Take good quality custard powder in vanilla flavor and you will automatically yield a yellow cake in a deeper vanilla flavor.

The use of whole wheat instead of all-purpose flour was just by chance. And, frankly I quite liked it. The cake is unusually soft and fluffy which I did not expect considering that whole wheat naturally makes baked products chewy and dense. I do, however, plan to remake this same recipe with all-purpose flour one day and see how different it turns out in terms of texture.

I had a few dark chocolates in hand and wanted to add in this cake. I imagined a chunky chocolate layer on top of cake but what happened during baking, was that all the chocolate sunk inside and formed an interesting molten lava just at the center of the cake. It was not a bad thing at all!
For now, before I forget the recipe let me note down for you and me for later reference!

Ingredients:

  1. 1.5 cups of flour
  2. 1 cup milk
  3. 3/4 cup sugar
  4. 1/2 cup vegetable oil or 3/4 cup unsalted butter
  5. 1/2 cup vanilla custard powder
  6. 1/4 cup chopped dark chocolate (optional)
  7. 2 eggs
  8. 2 tbsp. baking powder
  9. 1/4 tsp. salt

Method:

Preheat oven at 180 degrees Celsius.
In a large mixing bowl, beat together eggs and oil till they emulsify.
Meanwhile, simmer milk.
Add vanilla essence and custard powder to the egg mixture.
Meanwhile, sieve flour, baking powder and salt together.
Add sugar to egg mixture and whisk well till sugar dissolves.
Add the flour mixture to the egg mixture.
Gradually pour hot milk and whisk rigorously to avoid any lumps of flour.
Whisk till you see a smooth yellow cake batter.
Pour the batter in a greased and flour cake tin.
Spread an even layer of chocolate chunks.
Bake for 45-50 minutes or till a toothpick inserted comes out clean.
