My recipe is simple and uses very few ingredients.
I have not used any orange juice, so don't mind if you feel a lack of tang in the cake. I however you wish then feel free to add 0.5 cup of fresh orange juice and reduce the quantity of milk from 1 cup to 0.5 cup.
While, the orange peel is enough to give the cake the taste and flavor of oranges, you can still go ahead with a few drops of Orange Essence and Orange Food Color for a more robust smelling and orangish looking cake.

Ingredients:
- 1.5 cups of all-purpose flour
- 1 cup milk
- 1 cup sugar powder
- 1/3 cup vegetable oil
- 1 tbsp. whole flax seeds
- 1 tbsp. baking powder
- 1/4 tsp. fine salt
- peels of 2 medium size oranges or 2-3 tbsp. of orange zest
Method:
In a mixer-grinder, make a paste of orange peels and flax seeds.
In a large mixing bowl, sieve together flour, sugar, baking powder and salt.
Add the orange paste, oil and milk.
Whisk well till a smooth cake batter forms.
Grease and flour a baking loaf pan or cake tin.

* For baking on Stove Top - Heat a large vessel. Place a metal stand inside and situate the loaf tin right at the middle. No need to cover the cake tin. Cover only the large vessel. Cook on low heat for 1 hour or till the cake rises and toothpick inserted comes out clean. No need to add water for steam.
* For baking in Oven - Preheat oven at 180 degrees Celsius. And bake for 45 minutes or till toothpick inserted comes out clean.
* For baking in Frying Pan - heat 1 tbsp. oil in a fry pan and pour 1-2 ladle full of cake batter. Flip the pancakes when bubbles form on top. Serve with maple syrup and fresh fruits for breakfast.
* For baking in Microwave - pour the cake batter in a silicon or heat safe glass bowl/mould and bake according to instructions in the microwave manual.
This recipe looks delicious. Can we avoid flax seeds. Other ingredient to be added to avoid flax seeds
ReplyDeleteYou can use egg itself. 2 eggs for this recipe. If not then, leave out both flax seeds and egg completely. There are egg replacement information in the internet, but I would not want to use items like mashed bananas, condensed milk or yogurt for this recipe because it will turn the cake batter very mushy and cake will become dense. However, I would like to know what is causing you problem with flax seeds?
