Ingredients:
- 1 cup suji/semolina
- 1 cup white sugar
- 3 cups water
- 1/2 cup vegetable oil/ghee
- 4-5 elaichi/cardamoms
- 2 bay leaves
- 10-15 raisins
Method:
In a heavy bottom pan/kadhai, ghee.
Temper bay leaves till it turns dark brown.
Take out the bay leaves.
Reserve them for later usage.
Meanwhile, soak raisins in water to get rid of any impurities.
Now to the fragrant oil, add suji and fry till dark brown.

Continue stirring on high heat.
Add water and cook on high heat for 1-2 minutes.
Reduce the heat and add sugar, raisins and bay leaves.
Stir well till sugar dissolves, water has evaporated and suji is well cooked.
Meanwhile, make a fine powder of elaichi.
Add elaichi powder and stir till halwa begins to leave the sides of the pan.

Switch off the heat and cover for 5 minutes before serving.
