Winter is also the time for Christmas holidays; which also brings in tons of sweet treats.
My staple baking in winter is carrot cake and rum cake. Both are rich, spicy and perfect for winter evenings with a cup of tea or coffee.
While I did share rum cake recipes previously, I realized I never wrote about carrot cake.
So, today I share my best ever carrot cake recipe that makes for a big fluffy spongy mouthfuls of carrot cake.
Ingredients:
- 2 cups all-purpose flour
- 1.5 cups grated carrots
- 1+1/4 cups sugar
- 3/4 cup vegetable oil
- 2.5 tsp. baking powder
- 1 tsp. cinnamon powder
- 1 tsp. vanilla essence (Get on Amazon)
- 1/4 tsp. nutmeg powder (Get on Amazon)
- 1/4 tsp. salt
- 3 eggs
Method:
In a large mixing bowl, whisk sugar, eggs, oil, vanilla essence, cinnamon powder, nutmeg powder and grated carrots.
Cool the cake and cut into slices.
