For 2021, I prepared this dish as Holi special. And it became everyone's favorite.
Ingredients:
- 2 cups urad dal
- 1.5 cups yogurt
- 1/2 cup tamarind sauce
- 1/2 cup green chutney
- 2 tbsp. dahi bhalla masala (Get on Amazon)
- 2 tbsp. sugar
- 1 tsp. whole zeera
- 1/8 tsp. hing
- salt to taste
- oil for deep frying
Method:
Soak urad dal in enough water for 4 hours.
Then grind the dal into a thick gritty paste.
Mix zeera, salt and hing to the dal paste.
Allow the dal mixture to rest for 10-15 minutes.
Meanwhile add some sugar in yogurt and chill in the fridge.
Now heat oil for frying.
Into the hot oil, add tablespoon amount of dal batter.
Fry medium size pakoras till golden brown.
Take them out on a platter and allow it to cool for sometime.
Now put the pakoras into a bowl of warm water.
At the time to serving, in a large serving platter, gently squeeze the pakoras to remove any excess water and place them on the platter.
Drizzle the sweetened yogurt on top.
Alternatively, add green chutney and tamarind sauce and yogurt as per your desire.
You can also add boiled and diced potatoes, sprinkle chaat masala, dahi bhalla masala and roasted zeera powder.
